Bright, aromatic, and hop-forward, our IPAs showcase the vibrant side of craft beer. From citrus and pine to tropical fruit and floral notes, each batch highlights carefully selected hops for maximum flavor and aroma. Crisp bitterness meets refreshing drinkability—perfect for those long North Carolina afternoons.

Stouts

Rich, bold, and unapologetically smooth, our stouts are built for depth and character. Expect layers of roasted malt, dark chocolate, and fresh coffee notes, balanced with a velvety mouthfeel. Fruited Sours

Mead Program

Rooted in ancient tradition and crafted with a North Carolina spirit, our meads celebrate honey in all its complexity. From dry and delicate to rich and fruit-infused, each pour highlights the natural character of the honey and our careful fermentation process. It’s where old-world craft meets modern creativity.

Melomel

Bright, expressive, and deeply tied to the seasons, our melomels bring together raw honey and real fruit in bold harmony. We lean into North Carolina’s agricultural heritage—think sun-ripened peaches, wild blackberries, and late-summer blueberries.

Expect vivid color, layered aromatics, and a balance of natural sweetness and acidity that lets both fruit and honey shine. These are vibrant, crowd-pleasing pours that feel like Carolina harvest in a glass.

Bochet

Bochets begin with transformation—honey slowly caramelized over heat until it deepens in color and complexity. This process unlocks rich flavors of toffee, marshmallow, dark caramel, and subtle smokiness before fermentation even begins.

The result is a bold, full-bodied mead with a deep amber hue and a lingering, dessert-like finish. Smooth yet complex, bochets are a showcase of craftsmanship and patience—perfect for slow sipping and those who appreciate a darker, more indulgent side of mead.

Metheglin

Our metheglins explore the intersection of mead and botanicals, layering herbs and spices to create depth and intrigue. From warming blends of cinnamon and vanilla to subtle infusions of herbs and florals, each recipe is designed to complement—not overpower—the honey base.

These meads are contemplative and complex, perfect for slow sipping and seasonal releases that reflect the rhythm of the year.

Pyment

Where mead meets wine, our pyments bring together the richness of honey and the depth of grapes in one beautifully layered pour. By fermenting with wine grapes or fresh-pressed juice, we create a hybrid that bridges two ancient traditions into something distinctly our own.

Traditional

Our traditional meads are the purest expression of honey, water, and time—nothing more, nothing less. Each batch highlights the unique character of regional honey, from light floral notes to deep, caramelized richness.

Dry meads finish crisp and wine-like, semi-sweet offerings balance nuance with approachability, and sweet meads deliver a lush, honey-forward experience. These are the roots of our craft—simple ingredients, thoughtfully transformed into something timeless.


Kombucha Program

Crisp, effervescent, and full of life, our alcohol-free kombucha offers a refreshing alternative without sacrificing flavor. Naturally fermented with tea and botanicals, it delivers bright acidity, subtle sweetness, and a clean finish. Perfect for those seeking something lively, flavorful, and alcohol-free.
